Uncle Jim’s Bacon Jam

Ingredients 

  • 1.5 pounds sliced bacon,
  • cut crosswise into 1-inch pieces
  • 2 large shallots, diced
  • 2 garlic cloves, peeled and pressed
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp ground cayenne pepper
  • 3/4 cup strong fresh brewed coffee
  • 1/4 cup good balsamic vinegar
  • 1/2 cup packed dark brown sugar
  • 1/4 cup pure maple syrup
  • 1/4 cup Bourbon

Directions

In a large skillet over low heat, cook the bacon, stirring occasionally, until the fat is rendered and the bacon is lightly browned, about 10 minutes. Using a slotted spoon, transfer the bacon to paper towel-lined plates to drain.

Pour off all but 1 tablespoon drippings, add the shallots to the skillet and cook until translucent, about 4 minutes. Add Garlic, black and cayenne peppers, stir in and cook another minute. Remove from heat and Add the coffee, vinegar, brown sugar, Bourbon and maple syrup. 

Stir well, scraping up any browned bits from the skillet. Return skillet to heat and bring to a boil. Reduce heat and stir in Bacon. Reduce heat to a bare simmer and cook uncovered stirring occasionally until syrupy, 1 1/2 to 2+ hours. Remove from heat and let cool before transferring to a food processor and pulsing until a jam-like texture.

Spoon the jam into jelly jars and refrigerate for up to 4 weeks. Transfer to a pan Or Microwave to re-warm gently prior to serving. Makes about 50, 2 Tbsp servings.
