Herb Crusted Pork Rib Roast

Pork rib roast deliciously seasoned and roasted to perfection.
Ingredients
6-7 pound Pork Rib Roast
2-3 tablespoons herb de provence or dried rosemary
1 tsp tablespoon kosher salt
½ tablespoon fresh ground pepper
Instructions
- Start by bringing the roast to room temperature for 30 minutes.
- Preheat the oven to 400º F.
- Mix the seasonings in a small bowl. Generously rub the seasoning into the roast, covering all sides.
- Place roast fat side up on roasting pan equipped with a rack.
- Roast uncovered for 15 minutes until a golden-brown crust forms.
- Reduce the heat to 325 º F and continue to roast uncovered for about 1 and a half to 2 hours. This will vary depending on the size of your roast. A pork roast is done when a meat thermometer reaches an internal temperature of 145 degrees Fahrenheit.
- Remove the pan from the oven and place it on a cutting board. Let rest for 10 minutes before slicing. This keeps all those tenderizing juices inside the roast.
