Bay Woo Bacon
Ingredients
- 2 pounds bacon, sliced in 1/5 pound slices
- 1+ Tbsp fresh ground black pepper
- 4+ Tbsp ground cayenne pepper
- 2-3 cups dark brown sugar
- 2 tsp crushed red pepper
Directions
- Preheat Oven to 250 degrees
- Arrange Bacon Slices tightly on metal rack atop foil lined baking sheet with as few gaps between slices as possible.
- Sprinkle black pepper evenly over bacon slab, then coat with cayenne pepper. Gently spread Brown Sugar evenly over slab and sprinkle with crushed red pepper. Press down sugar to remove any “fluffy” texture.
- Place in oven and bake for 3.5 to 4 hours.
- Remove from oven and let cool for 2 minutes. Remove from rack and rest on paper towel before serving warm.
Can be refrigerated in single layer up to 2 days or until sugar turns gooey. Microwave briefly to re-warm prior to serving.
Makes about 20, 1/2 strip servings.
